Mango Lime Cookies

These summer flavors mixed with a sweet sugar cookie dough will transport you to paradise. Mango in a cookie might sound crazy, but trust me, these will blow you away! The slight citrus from the lime enhances the mango flavor, and the chewy sugar cookies and soft mango bites are a perfect combo. If you want to add a little extra adventure to your cookies, throw in some dark chocolate chips to take the flavors to a whole other level.

Ingredients:
1 c butter, softened
1 1/2 c granulated sugar
1/4 c brown sugar
1 egg
1 tsp vanilla
2 tsp lime zest
2 tsp lime juice
3 c flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2.4 oz freeze dried mango, chopped

For these cookies I used freeze dried mango. The moisture from the cookie dough will soften the freeze dried chunks so they are soft in the cookie instead of crunchy. I got my mango from Aldi. I used two of their packages in this recipe.

First, you’re going to want to chop up the mango. You will most likely end up with some smaller pieces or powder and that is perfectly fine! Any powdery bits will help flavor the cookie. I transfer the chopped mango to a small container or bowl and set them aside.

Next, zest the lime. Doing this now will save you time once you get started on the dough. I used a grater and zested a whole lime over a plate. This way I had extra zest in case I wanted some more lime flavor. Make sure to get the green, but not any of the white part of the peel. The white part is bitter and could affect the taste of the cookie. I set the plate aside and started making my cookie dough.

In a medium bowl, add your softened butter and sugars. Beat until combined and fluffy.

Now, add the egg, zest, lime juice, and vanilla. Beat these in until well combined.

Add in your flour, baking powder, and baking soda. Slowly mix this in until well combined. You will have a thick and sticky cookie dough.

Now we add the mango! I use a spatula to fold the mango chunks into the dough. You will need to use a little strength here as the dough is thick. Make sure the mango seems to be evenly dispersed in the dough. Optionally, you could also add some dark chocolate chips here. It may seem crazy, but it’s a delicious addition!

On a baking sheet lined with parchment paper, drop dough in large spoonfuls or scoops. If you want your cookies to be a bit flatter and have a more even surface, I recommend flattening the top of the scoop with your palm before baking.

Bake at 350 F for 8-10 minutes or until golden brown on the edges. Allow to sit for a minute or two before transferring to a cooling rack. Enjoy!

  • ½ tsp salt
  • 2.4 oz freeze dried mango chopped

Instructions

  • Preheat oven to 350° F.
  • Chop mango into small chunks. Set aside.
  • Zest lime. Set aside.
  • Beat softened butter and sugars together until well mixed and fluffy.
  • Add in egg, zest, juice, and vanilla. Beat until well combined.
  • Add in flour, baking soda, baking powder, and salt. Mix until you have a uniform dough.
  • Fold in the mango chunks until well mixed. If choosing to add chocolate chips, add here.
  • Drop by scoops/spoonfuls onto a baking sheet lined with parchment paper.
  • Bake for 8-10 minutes or until golden brown along the edges. Let set for a minute or two before transferring to a cooling rack.
