Peppermint Mocha Brownies

The best winter beverage? Peppermint mocha – hands down. These peppermint mocha brownies are super easy to make and find the perfect balance between peppermint, espresso, and rich chocolate. As an added bonus- there’s caffeine in them which means brownies for breakfast!

Ingredients:
Brownie mix (or your favorite brownie recipe)
1 tsp espresso powder
1/4 tsp peppermint extract
4-5 oz Nestle espresso morsels
2-3 crushed candy canes (or peppermint candies)

Pour the brownie mix into a medium mixing bowl. Add a tsp of instant espresso. Prepare the brownies according to the box. Add the peppermint extract here with the wet ingredients.

Stir in about half a bag of the Nestle espresso morsels. Spread batter out evenly into a greased pan. I used a 9×13 for mine, but you could use another size pan depending on how thick you want your brownies. Sprinkle crushed candy canes on top and bake according to the directions on the box.

My trick for chewy brownies is to take them out just before the knife or toothpick is perfectly clean. The brownies will finish cooking in the hot pan when they come out of the oven.

  • 1 box Brownie mix
  • 1 tsp espresso powder
  • ΒΌ tsp peppermint extract if you want a stronger flavor use up to 1/2 tsp
  • 4-5 oz Nestle espresso morsels
  • 2-3 crushed candy canes or peppermint candies

Instructions

  • Pour brownie mix into medium mixing bowl and add espresso powder.
  • Prepare brownie batter according to box directions adding the peppermint extract with the wet ingredients.
  • Stir in espresso morsels
  • Pour batter into a greased baking pan. Sprinkle crushed candy canes/candies on top.
  • Bake according to the box directions. I like to take the brownies out just before the knife/toothpick is perfectly clean (like a wet crumb-not batter). The brownies will finish cooking in the pan and you will have perfect gooey and soft brownies!
  • Allow to cool and then cut and enjoy!
