Easy Apple Pie

Who doesn’t love apple pie? Making a homemade pie might seem intimidating, but I’m here to show you how to quickly and easily make a delicious and fresh apple pie in your own kitchen! It’s a perfect recipe to use up extra apples from apple picking or if you have some apples that are close to going bad and you want a fun way to use them up!

Ingredients:
Pie crust – 2 circles (9-10 inches)
5-6 large apples
1 cup brown sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 tbsp flour
1 tsp vanilla extract
1 tsp butter

First, lets talk about the crust. If you want to be fancy and make your own crust, go ahead, but I prefer to take the ‘lazy’ route and purchase pre-made pie crust. You can find it in the refrigerator section often by the pre-made cookie dough or crescent rolls. I got mine at Aldi, but you should be able to get it at any grocery store.

Take the first piece of dough and place it into your pie pan. I used a 9-inch glass pie pan. Make sure the dough is pressed into the pie pan and trim where necessary.

Core and peel your apples. I find it easier to core them first, then peel and cut. I cut the apples into quarters first, then take each quarter and cut into slices. From there, I cut the slices in half to make apple ‘chunks’.

In a medium bowl, combine brown sugar, cinnamon, nutmeg, vanilla, and flour. Add the apples and stir well to thoroughly coat the apples in the mixture.

Add the apples to the pie crust. Make sure to get all the mixture in there. Cut up the butter into small pieces and spread around the apples.

Now, make the lattice top. This might seem intimidating, but I actually think it’s way easier than trying to put a whole layer of crust on top and then cut holes. Take your second piece of pie crust and cut it into strips 1/4-1/2 inch wide. Start by placing the longest strip in the center of the pie vertically. Then line up strips so that there is about 1/4-1/2 inch between them.

Next, fold the center strip up and place a strip in the center of the pie going horizontally. Fold the original strip back over the new one and repeat this alternating between strips so that the horizontal strip is over, under, over, under. Repeat this process for all horizontal strips, making sure to alternate whether that center strip is over or under. Once you have your lattice, press your strips into the edges of the crust and trim where needed.

You can beat an egg and brush the crust with an egg wash if you want. This will help the crust be shiny. Preheat oven to 350 F. Bake pie for 50-60 minutes or until the crust is a golden color and some pie filling seems to be oozing out.

Allow pie to cool a bit before slicing to allow the filling to thicken a bit. This gives you a better chance of being able to get nice neat slices. Of course, if you don’t care about the slices being pretty, you can dig right in.

  • 2 tbsp flour
  • 1 tsp vanilla extract
  • 1 tbsp butter cut into small pieces

Instructions

  • Preheat oven to 350° F.
  • Take your first sheet of pie crust and place it into a 9-inch pie plate. Make sure to press the crust into the pan so that it is even and flat. Trim edges where necessary.
  • Core and peel your apples. Cut apples into quarters. From each quarter, slice apples and cut slices in half.
  • In a bowl, combine brown sugar, cinnamon, nutmeg, flour, and vanilla extract.
  • Add apples to bowl and stir to thoroughly coat apples in mixture.
  • Pour apples into pie crust.
  • Cut tbsp of butter into small pieces and spread out on top of the apples.
  • Cut the second sheet of pie crust into strips about ¼-½ inch in width.
  • Place strips vertically on top of the apples spread out with about ¼-½ inch between them.
  • Fold the center strip up and place a strip horizontally in the middle of the pie. Fold first strip back over the new strip. Do this for ever other vertical strip alternating between, over, under, over, etc.
  • Repeat until whole pie has lattice top. Pinch edges together and trim where needed.
  • If doing an egg wash, beat an egg and brush the beaten egg on top of the crust. This helps the crust have the shiny appearance.
  • Bake pie for 50-60 minutes or until crust is golden brown and pie filling seems to be bubbling/oozing. If your edges are browning too quickly, you can cover with some tin foil.
  • Allow pie to cool for 15 minutes or more before serving.
